Today we taste broken block chocolate Callebaut. It can be found in Wholefoods, sold in bulk. Packaging is corresponding :) or, one can say it's absent. Sticker says that it's a 70% cocoa piece. Taking into account color and smell, it's not hard to believe. There are other pieces of chocolate on the same shelf, with 60%, 54% and 100% of cocoa. And they really have different colors.
An advantage of such a chocolate is price. For 140 grams I paid a little over $3, which is cheaper than any bar costs. But there are also disadvantages, breaking out a piece of a chocolate is not possible, you need to crack it first. The process is not too difficult, but as an output you got pieces of different shapes and sizes and often have to repeat the operation.
The smell is pleasant, sweet and bitter, with a dash of vanilla, but it does not hinder too much.
I also like the taste, a good balance of sweetness and bitterness, quite a bit of astringency of cocoa, almost imperceptible acidity in the background, which is revealed more in the aftertaste. There is, however, some other tone that I could not identify. Maybe it would be better off without it. Maybe worse.
In general, it seems to me that this is a high quality chocolate. Solid four stars.
Сьогодні пробуємо шматковий шоколад Callebaut. Продається він у Wholefoods на вагу. Упаковка тут відповідна :) вона, скоріше, відсутня. Наклейка повідомляє, що тут 70% какао. Враховуючи колір та запах, цілком віриться. У магазині на одній полиці також лежать шматки 60%, 54% і 100% шоколаду. І колір у них справді різний.
Плюс такого шоколаду у ціні. За 140 грам, я заплатив трохи більше $3, що дешевше за всі плитки. Але є й мінуси, ламати такий шоколад не виходить, тільки колоти. Процес не надто важкий, але на виході шматки різної форми та розміру і часто операцію доводиться повторювати.
Запах у шоколаду приємний, солодкувато-гіркий, з домішкою ванілі, але вона особливо не заважає.
Смак мені теж подобається, хороший баланс солодкості та гіркоти, зовсім трохи терпкості какао, майже непомітна кислинка на задньому фоні, яка розкривається сильніше після смаку. Щоправда, є ще якийсь присмак, який я не зміг ідентифікувати. Можливо, без нього було б краще. Можливо й гірше.
В цілому, мені здається, що це якісний шоколад. Тверда четвірка.
