Today we taste broken block chocolate Callebaut. It can be found in Wholefoods, sold in bulk. Packaging is corresponding :) or, one can say it's absent. Sticker says that it's a 70% cocoa piece. Taking into account color and smell, it's not hard to believe. There are other pieces of chocolate on the same shelf, with 60%, 54% and 100% of cocoa. And they really have different colors.
An advantage of such a chocolate is price. For 140 grams I paid a little over $3, which is cheaper than any bar costs. But there are also disadvantages, breaking out a piece of a chocolate is not possible, you need to crack it first. The process is not too difficult, but as an output you got pieces of different shapes and sizes and often have to repeat the operation.
The smell is pleasant, sweet and bitter, with a dash of vanilla, but it does not hinder too much.
I also like the taste, a good balance of sweetness and bitterness, quite a bit of astringency of cocoa, almost imperceptible acidity in the background, which is revealed more in the aftertaste. There is, however, some other tone that I could not identify. Maybe it would be better off without it. Maybe worse.
In general, it seems to me that this is a high quality chocolate. Solid four stars.

Учитывая цвет и запах, вполне верится. В магазине на одной полке также лежат куски 60%, 54% и 100% шоколада. И цвет у них действительно разный.
Плюс такого шоколада в цене. За 140 грамм, я заплатил чуть больше $3, что дешевле всех плиток. Но есть и минусы, ломать такой шоколад не получается, только колоть. Процесс не слишком уж трудный, но на выходе куски разной формы и размера и часто операцию приходится повторять.
Запах у шоколада приятный, сладковато-горький, с примесью ванили, но тут она особо не мешает.
Вкус мне тоже нравится, хороший баланс сладости и горечи, совсем чуть-чуть терпкости какао, почти незаметная кислинка на заднем фоне, которая раскрывается сильнее в послевкусии. Есть, правда, еще какой-то привкус, который я не смог идентифицировать. Возможно, без него было бы лучше. Возможно и хуже.
В целом, мне кажется, что это качественный шоколад.Твердая четверка.
